Why do you need to replace your burrs? Well because after about 800-1000 pounds the burrs lose their sharp edge, which leads to inconsistent extraction due to uneven grind particle size. Specialty coffee professionals know that this is always detrimental to your coffee. Having greater grind consistency will lead to higher extraction and greater balance.
